Rolls

So while I may not know how to cook a turkey (I’ll get a bag to cook it in), sweet potatoes (going to need help with this one), mashed potatoes (I think I’ll use the steam and mash) or stuffing (from a box); I can make some good rolls.  And I want good rolls to grace your Thanksgiving tables this year so I am sharing with you the super secret recipe of my mother’s.  You can thank me later. Alright, it’s not super secret but it is super good.  And it is my mother’s. 

Out of this World Rolls (very properly named, if I do say so myself)

Ingredients:

  • 2 packages yeast
  • 1/4 cup warm water
  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 cup warm, warm water
  • 3 eggs, well beaten
  • 4 1/2 cups flour
  • 2 tsp salt

Directions:

  • Soften yeast in 1/4 cup warm water and set aside. 
  • Place shortening, sugar, eggs, water, salt and 2 1/2 cups of flour in bowl. Beat until smooth.
  • Add softened yeast and blend well.
  • Add remaining flour and mix in. Cover and let rise until doubled.  Punch down and refrigerate overnight.
  • Three hours before serving, roll out dough.  Cut dough in circles.
  • Melt some butter on baking sheet and run circles of dough through the butter and fold in half.  Let rise.
  • Bake for 15 minutes at 400.  Makes about 35 rolls.

Personally, I would double the recipe. Maybe even triple it.  Because they are that good.  And they are even better the next day with some leftover mashed potatoes and gravy.

This is almost exactly the same recipe I use (I can even make it in my kitchenaid). But sadly it isn't my grandmother's recipe - her's is too hard!

Sweet potatoes are easy. Cut them up into similar sized chunks and boil until tender, with peel. It is easier to peel them after they've boiled. Then cut them up and either mash with butter and brown sugar or cut into chunks, add butter and sprinkle with brown sugar and marshmallows - bake until marshmallows brown. If you can do rolls, you can do sweet potatoes! You can even buy them canned and cut out the boiling.
